How to Make Genuine Artificial El Pollo Loco Pollo Asado

How to Make Genuine Artificial El Pollo Loco Pollo Asado (or Marinated Roast Chicken)

Mix all ingredients together and use large, sealed tupperware container or large plastic bag to marinate whole chickens (or pieces if desired) overnight in the refrigerator.

Preheat Oven to 375º Fahrenheit

Place chicken in roasting pans and cover with aluminum foil. Bake chicken for forty minutes or until completely cooked through to the inside.

How to Make Genuine Artificial El Pollo Loco Pollo AsadoNOTE: The use of achiote paste is optional but in my opinion, makes the marinade much nicer. I also enjoy adding a touch of “Chile Chipotle” (not to be confused with the restaurants ... see the illustration) to braise the chicken for a barbecue with or to mix with the marinade depending on how many people with me enjoy a more spicy variety.
